Peanut Butter Balls via Flickr

…unless you have no oven. This year, I thought I would share a friend’s recipe for no bake peanut butter balls that she made for a Christmas dinner she hosted over the weekend.

Definitely looking forward to making these just as soon as I get a real kitchen back in my life.  **I do not have the fridge/freezer/counter space to make these but I wanted to share anyway!**

What you’ll need:

  • tin foil + wax paper
  • 1 stick of margarine, softened
  • 2 cups peanut butter
  • 1 bag of powdered sugar
  • 3 cups rice kris pies
  • 8 oz. bar of chocolate (I prefer dark, use milk if you want)
  • 6 oz. package of chocolate chips
  • (the original recipe calls for ½ cake paraffin wax that’s used on candies, etc. but I’m thinking you could skip this part if you’re good at tempering your chocolate)
  1. Blend the butter, peanut butter and powdered sugar in a large bowl.
  2. Mix in the rice krispies.
  3. Cover baking sheets with tin foil. Using a melon scoop and your hands, roll into ¾-1 inch balls and place on the lined cookie sheets. Pop in the freezer for 5-10 minutes or until firm.
  4. When the peanut butter balls are firm, melt the chocolate bar, chocolate chips and wax (if you’re using it) in a microwave safe bowl or double boiler on low heat.
  5. Using a toothpick or wooden skewer, dip the peanut butter balls in the chocolate mixture, place on waxed paper and refrigerate. These can also be frozen.
