quick stir fried rice and veggies

This quick dish is perfect when you have just enough time and energy to throw together something to eat. Literally a few ingredients, your microwave rice cooker and you’re set, usually with leftovers that work great in a burrito. (Serves 2 + leftovers)

What you’ll need:

  • 2 eggs
  • 1 cup of rice, white or brown
  • Sesame oil
  • 1 bag of frozen vegetables (any of your favorite vegetables can be used – I love the Southwest bag that has black beans, broccoli, red pepper, and corn mixed together)
  • Garlic powder
  • Ground ginger
  • Red pepper flakes
  • Sea salt

Remember that rice and pasta cooker I mentioned before? Super easy to use but make sure you start the rice first for this recipe. 

  1. Using the strainer from the rice cooker, rinse 1 cup of rice under cold water for a few minutes. Add the rice to the bottom of the pasta/rice cooker and mix with 1½ cups of water. Put the lid on, lock the clamps and open the vent holes in the lid. Cook in the microwave for 10-12 minutes (longer, closer to 18 minutes for brown rice). For whatever reason, this thing always makes a mess of rice water in the microwave… 
  2. With pot holders, remove the rice cooker, close the vent holes and let it be until it’s time to add it to the veggies later.
  3. In your large skillet, heat about a tablespoon of the sesame oil over medium heat.
  4. Scramble the 2 eggs in a small bowl and add to the pan. Using a wooden spoon, mix the eggs up until cooked well but still have a bit of moisture to them (don’t over cook!)
  5. Remove the scrambled eggs onto a small plate and set aside.
  6. Add a little more sesame oil, frozen vegetables and seasonings like garlic powder, ginger, salt and pepper etc.
  7. Put the lid on your pan and stir every few minutes. Cook just until the veggies are tender/crisp.
  8. Add in your eggs and rice and mix well. Test it quick for seasonings and add anything extra that you may want here.
  9. Once heated through, serve in bowls or on tortillas.

The leftovers next day are even better. Reheat in the microwave for 2-3 minutes with a couple of tablespoons of water in the bottom of your storage container.
