Shredded Chicken Taco

Love this quick recipe I found on Pinterest. Make sure you have the homemade taco seasoning on hand for this one. Since I didn’t have onion powder to add to the seasoning recipe, I placed 3 thick slices of onion on the bottom of my crockpot so I wouldn’t miss out on that flavor.

Three ingredients. That’s it. Throw it all in the crock pot, set on low before you go to work and when you get home you’ll have chicken that falls apart with the touch of a fork. I’ll definitely be doing this one again but will probably add some jalapeños to the crock pot next time.

What you’ll need:

  • 3-4 chicken breast (I had a pkg. of 2 but it was just enough for 3-4 tacos and leftovers would have been nice with this recipe)
  • Jar of salsa (I had half a jar leftover that I used – you’ll want a full jar to do 4 chicken breasts)
  • 2 tablespoons of homemade taco seasoning (recipe)

I mentioned I made a bed of onion slices and placed those on the bottom of the crock. Place your chicken breasts next and sprinkle your taco seasoning on top of the chicken.
Top with the salsa, put the lid on and cook for 6-8 hours on low. The chicken will literally fall apart and shred easily. There will be liquid leftover in the crock so just pull the chicken out and shred on a plate when you’re ready to eat.

Serve on soft tortillas with lettuce, cheese and sour cream.
