broth infused orzo and spinach with a fried egg

This is another one of those dishes where it came down to what ingredients I had around. I had just grabbed a huge thing of organic baby spinach at the grocery store and had a bag of orzo pasta and thought why not put a fried egg on top? Quick, easy and pretty damn tasty! For added protein, you could add a serving of sunflower nuts (¼ cup is 7g of protein). I buy the roasted, no salt package you can find in most grocery stores.

You’ll need your microwave rice/pasta cooker and something to fry up your eggs.
Makes 2 servings

What you’ll need:

  • ¾ cup orzo
  • 1 bouillon cube (any flavor, I used vegetarian)
  • Spray olive oil
  • 2 eggs
  • 4 cups of baby spinach
  • red pepper flakes
  1. In your microwave rice/pasta cooker, place 2 cups of water and 1 bouillon cube. With the lid off, place the rice cooker in the microwave for 8-10 minutes, or just until the water is boiling.
  2. With a fork, mash up whatever’s left of the bouillon cube and pour in your orzo. Mix with a fork and pop back in the microwave for 9-10 minutes (follow instructions on your orzo, cooking times may vary). 
  3. Most of the liquid may be gone when the orzo is done cooking. If that’s the case, add another ½ cup or so of water and top with your spinach. Your rice cooker will be filled to the top so just use a fork to mash it down, put the lid on with vents open and pop back in the microwave for 2-3 minutes. You just wanted the spinach to be wilted and cooked down a bit.
  4. Remove the rice cooker from the microwave, and leave the lid on while you cook the eggs. Spray a pan with a little bit of olive oil and fry up 2 eggs to your liking. Make sure to top the egg with red pepper flake to give it a kick.
  5. Drain your spinach and orzo and divide into 2 bowls. Top each with one fried egg and serve!
