New Year's Day pancakes

Well. Here goes nothing, 2018! After a few days of fun in the world of hellish flu, I woke up today finally feeling somewhat normal. Oh, and with a craving for pancakes. You’ll need to prep a mix of self rising flour for this recipe that you can store for future pancake cravings. 

Self Rising Flour
*Make one cup of this self rising flour and store in an air tight container. I label mine so it’s clear it’s for this quick + easy pancake mix whenever you have a craving. ¼ cup is all you need for this single serve pancake recipe.*

Mix together:

  • 1 cup all purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt

Recipe makes 2 pancakes
What you’ll need:

  • ¼ cup self rising flour
  • 2 teaspoons sugar
  • ¼ cup milk
  • 1 tablespoon olive oil (vegetable will also work)
  • 1 egg white
  • vanilla extract

In a small bowl mix together ¼ cup self rising flour + 2 teaspoons sugar.

In a liquid measuring cup, measure out 1/4 cup milk and add 1 tablespoon olive oil and 1/2 teaspoon vanilla extract. Mix with a fork and add the liquid into the dry mix.

pancake batter + egg whitesIn a separate, smaller bowl, beat your egg white with an electric mixer until the tips of the egg whites curl when you remove the beaters.

With a spatula, fold the egg white into the rest of the ingredients until well incorporated.

Add a little bit of cooking spray or oil to a small skillet and heat up over medium heat.

Divide the batter in half and make 2 pancakes. Cook each side 2-3 minutes or until you start to see bubbles form around the edges. That’s when it’s time to flip and cook the other side.  Serve with butter and warm maple syrup.
